Chicken Soup Delight

Saturday soups are a tradition in Caribbean households and this recipe makes a bowl of rich, pumpkin flavored chicken soup that is good for any day of the week.


  • 1 crisp fall apple, sliced
  • A dab of coconut oil, for sautéing
  • Juice of ½ a lemon
  • 1 tbsp honey or maple syrup
  • Generous sprinkling of cinnamon

To Serve

A slice of lightly toasted challah, a dollop of coconut yogurt, and any crunchy elements of your choosing, such as:

  • Pomegranate seeds
  • Crumbled walnuts
  • Chia seeds
  • Toasted pine nuts


  1. In a small skillet, sauté your sliced apple in coconut oil over medium heat.
  2. Stir in lemon juice, honey or maple, and cinnamon, and cook until golden.
  3. Toast your challah, dress it up, and serve immediately.
